New Red Tail Boa

Hello all, new snake owner here, and I could use your help. 2 weeks I got a 1 year old red tail boa. She is about 3 feet long and has been very sweet. I am working on upgrading my terrarium setup, but she has access to a hide, basking lamp, and water. I fed her 1 small mouse last Wednesday (6/10) and 1 small one yesterday. It looked like an appropriate sized mouse, but right before I fed her yesterday, I could tell she was getting anxious for her meal. She took the mouse right when I put it in the enclosure. Today, she started watching me pretty intently (I work from home fairly close to her). She was eventually following each of my movements, and then tried to strike me through the glass. My question obviously is, why has she all of a sudden changed moods? Am I not feeding her enough for her age?
