New Red Tail Boa

Hello all, new snake owner here, I acquired a red tail boa 2 weeks ago. So far she has been very sweet, she is currently 1 year old and about 3 feet long. I am working on upgrading her enclosure, but she has access to 1 hide, water, and a basking lamp. I fed her 1 small mouse last Wednesday (6/10) and 1 small mouse yesterday. Before I fed her yesterday, she seemed anxious for her food. She calmed down a little after she ate, but today she started tracking all of my movements more than usual. She got to the point where she tried to strike me through the glass while I was walking by her. My question obviously is, why has her mood all of a sudden changed? Am I not feeding her enough maybe?
