How can you tell if a leo has impacted sand

they won't just sit in one spot for half the day (yes during the DAY, thats what mine is doing kinda.

Leopard geckos are mainly active at night. During the day they sleep.

Yeah i know, but the first week and a half a had her, she would move from cave to cave every 3-4 hours. Now she isn't even going in the cave that much during the day.

The best way to prevent it is not to house them on sand.

Has she poo'ed lately???

The only way to know for sure is if your leo dies, and you have an autopsy done. There are however, certain things which might indicate an impation, such as lacking appetite. Why do you ask? Under proper conditions, sand shouldn't be to much of a problem if small amounts are ingested.
