Well I don't really know why they eat it, maybe a defense mechanism so predators do not know they are around? as for other leo's eating the skin, no, mine won't eat the other';s skin. and they don't eat it all.. it could also be because they rip the skin off their own bodies, when the dry skin gets wet, it sticks in their mouth, and they HAVE to eat it, because they can't spit it out. whatever skin just falls off, they don't eat. as for shedding head first, well if they can get thet off first they do, but as long as the head isn't covered, they don't stress about it, and shed whichever way is easier.
