I was just wondering how old a Savannah monitor has to be before you can tell the sex of it??

as hatchlings quite easy to sex as seen on this photo males have bigger tail base, however in juveniles and young adults, females have wider tail base as they need to store fat for future egg production, in healthy adult males the tail base is more squares with less fat more muscular and always look higher from a lateral view even befor hemepen bulges can be seen.
In all species females stor more fat around there tail base then males, males need there tails for fighting and breeding, they also need less fat reserves as they have no egg production. Hope this helps kind regards

Can u tell the sex by probing them?

no! only Ornatus can be correctly probed as hatcheling.
